In this tour you will discover the Italian gastronomy and the Apulian tradition. You’ll see and touch with your own hands various aspects of food from harvesting to preparation and tasting. There will be wine tastings, walk in the woods in search for the local plants, preparation of ricotta and mozzarella cheese and a cooking class with our great chef Peppe Zullo. All of it garnished by a touch of art and culture. The tour is organised for small groups of up to 16 people in order to enjoy the best of the Apulian flavours.
Arrival in the estate of Nuova Sala Paradiso near Orsara di Puglia, in the hills of Apulia. The estate is totally surrounded by a natural environment made up of vineyards, gardens and a forest. All around a quiet atmosphere with the scent of burned wood. Once settled in your suites, we all meet in the cellar to start a guided tour with explanation of winemaking process followed by a tasting of the following wines: Bollicina (Spumante D’araprì), Rosé (Cantina La Marchesa: Il Melograno) followed by local wines (Aliuva and Ursaria) all accompanied by tasting of salami, cheese, a hot dish of the Apulian tradition and a second dish based on meat or vegetarian.
After breakfast, we will all meet in the garden for a walk accompanied by the great chef Peppe Zullo. We will go in search for ingredients suitable for our cooking class, such as borage or dandelion and other herbs typical of this area. We move then in the kitchen where the chef will help guests to prepare special recipes. Lunch with food prepared by guests all accompanied by local wine.
In the afternoon we will move to the village of Orsara, to visit some monuments: the churches of the seventeenth century, a baronial building of the twelfth century, the cave of St. Michael the Archangel, the Church of St. Nicholas. In the evening we will reach the town center, in a bakery with a straw oven dating back 1526 to assist to the preparation of bread and pizza baked according to the recipes of the Apulian tradition, with sourdough. Dinner will be served with pizza and local wine.
We all meet in the lobby after breakfast. We will travel to estate Bocca di Lupo to visit one of the most important wineries in Apulia located in the heart of the Murgia, the area DOC of Castel del Monte, whose land and climate allow the production of wines of excellence.
We will dive in Tormaresca’s cellars that produces fine wines, including the Trentangeli, the Kaloro, the Pietrabianca and Aglianico. The visit will end with a wine tasting and a traditional lunch in the estate. In the afternoon we will move to the nearby Castel del Monte, a world Heritage Site, to admire one of the most evocative and enigmatic castles of Apulia with its unusual shape. After the visit we will have a brief stop in Andria at the sweet museum, the site of the oldest confectionery in the area, where we will taste the most delicious variety of sweets produced by the firm Giovanni Mucci.
Return in the evening to Orsara di Puglia and gala dinner at the estate.
The day will begin in the early morning to see the demonstration of the master cheese makers who will make mozzarella and ricotta with fresh milk, all culminating with a tasty breakfast based on still warm ricotta, sprinkled with a tasty honey thistle. We will then move to Ascoli Satriano to visit the city museum and to admire an extraordinary work: the Griffins. An exhibit that is part of the collection of marbles of Ascoli Satriano, dating back to the fourth century BC, found in the Daunia territory in an elite tomb. Cut into pieces to be sold on the black market, they were found at the Getty Museum in California. After a long work of the local police and international mediation, the Griffins finally returned to Apulia to be admired. Read their incredible story.
